I am surprised at how many people don’t like beets. I love them! My sister’s family has a recipe for a jello beet salad that has become ‘my’ beet salad since I began to make it for Thanksgiving years ago. I just don’t tell anyone the secret ingredient is pickle juice! I am fortunate to live in a climate where many things grow; beets among them. These two were ready to pick yesterday morning. I couldn’t resist the urge to sketch and paint them before steaming them yesterday. Today they are nice and cold and will make a wonderful beet salad with goat cheese and red onions. Is it lunch yet?
